Le Taïtu
Simple Creole dining in a traditional Caribbean cottage. You have just found the quintessential *"local flavor"* of St. Martin island when you visit Le Taïtu. Appetizers include spicy fish fritters, stuffed crab, and the traditional Christophine Farcie - locally grown squash that is stuffed with spices. Among the main courses that exemplify the Creole kitchen, the menu includes a Mahi-Mahi fillet with a sauce of coconut milk, and of course its grilled chicken breast that is marinated to taste with local herbs and spices. The restaurant also has a daily changing assortment of specials that is posted on a blackboard. Le Taïtu is open for lunch and dinner.

Saratoga
John Jackson's Saratoga restaurant is a fine dining establishment located on the waterfront at the Simpson Bay Yacht Club. The proprietor and chef offers refined American cuisine that is modern and presented in an elegant fashion. The menu is ever changing and features local seafood, steaks, lamb and pork, poultry, and pasta. Saratoga is open for dinner from Monday through Saturday. The restaurant also accommodates private groups and special events. It often hosts engagement parties and company dinner events. Saratoga is one of the island's favorite locations for wedding receptions & dinners - complete with beautifully crafted wedding cakes that are made on premises. The wine list here features many of the most renown wine regions in the World, and carries many single vineyard selections that are hard to find because of their high allocation.

Thai Savanh
When the authors of this website crave an authentic Pho soup or tasty spring rolls, they always end up visiting this small restaurant and sushi bar on the side of Atlantis World Casino. In a way, Thai Savanh brings you back to the old Indochine, but the only aspect that is left standing of the French colonal traditions is the restaurant's decor, friendly service, and excellent South-East Asian cuisine. You have a choice to sit indoors in air conditioned comfort at the inside tables or the sushi bar, but we usually prefer the few outside tables - perched above the steps that serve as an entrance to the casino. While you dine here, you'll often find yourself in company of local Indian families who are attracted to Thai Savanh's wonderful vegetarian selections, and AUC students from the nearby medical university. As you sit outside at Thai Savanh, you can't help but notice the many people who enter the nearby Atlantis World Casino or stand outside on the steps while waiting for their friends - maybe on the way to a fine dining experience at Rare or Temptation next door. The backdrop to your delicious meal is formed by an amusing mix of local dignitaries and tourists to watch passing by, while you are spending a fraction and are provided with free entertainment and eye candy.
